What grind should I ask for on the grinder to have Universal Grind ?
Universal Grind is not a grind, but ground coffee that has undergone a mechanical process that allows it to be universal, but also the ecological option for consuming your coffee.
Castelo Coffee's Universal Grind is nothing like a traditional grind you might get with a mill. It is the result of a combination of processes The mechanical processes are developed in-house and are exclusive to the company, and all the equipment necessary for this method was designed by our team of professionals. This innovative process is distinguished by its absence of chemicals, preservatives, or additives. We care deeply about the health of our customers and only sell products that our own family would consume.
Universal Grinding is not a single-step process like traditional grinding. To purchase Universal Grinding, you must select bags from the collection. Universal Grinding uniquely.
Is my Universal Grind bag compatible with all my coffee makers ?
We named our technological processUniversal GrindingTo highlight its main advantage: its ability to adapt to a wide variety of coffee makers, such as espresso, filter, Bodum, French press, percolator, Turkish coffee maker, stovetop espresso maker, etc., all with a single bag. If you visit one of our stores, you'll see that we use the Universal Grind in our commercial coffee makers, making it compatible with both residential and commercial machines. This eliminates the need for a coffee grinder and reduces the amount of coffee required for each brew.
If you prefer a more intense flavor, use your usual amount of coffee in your coffee maker. You can also use 15% to 50% less coffee, depending on the coffee maker, while still staying within the "Golden Cup" range explained above. Your coffee will be balanced and just as flavorful, as you can see in the graphs measuring TDS and extraction percentage.
Could you explain to me what “Golden Cup” means ?
The SCAA Gold Cup Standard is a quality standard for coffee established by the Specialty Coffee Association of America (SCAA), now known as the Specialty Coffee Association (SCA). This standard sets the criteria for preparing a high-quality cup of coffee, emphasizing aspects such as aroma, flavor, consistency, and balance. To meet the requirements of the SCAA Gold Cup Standard, coffee preparation must follow precise rules for each step of the process, including the selection of coffee beans, storage, brewing time and temperature, and extraction method. Professional baristas use this standard to prepare an exceptional cup of coffee, distinguished by its superior taste and quality.

The TDS percentage indicates the coffee's strength, while the extraction percentage demonstrates the efficiency of the coffee extraction. Why the Universal Grind is the most ecological way to consume your coffee ?

In fact, green coffee production is the most polluting part of the coffee lifecycle, accounting for 40% to 80% of greenhouse gas emissions. Decreasing the amount of coffee you use per cup also helps reduce transportation, thus benefiting the environment, as resources are limited while demand remains unlimited. Experts estimate that we will need to produce twice as much coffee with half the land by 2050.
By using the Universal Grind, you reduce the risk of errors thanks to its more uniform grind, achieved through a series of mechanical processes. This optimizes the brewing process, and using less coffee doesn't compromise the quality of your cup. By reducing the risk of errors, you also reduce waste. In short, using the universal grind allows you to reduce your coffee consumption while obtaining an optimal brew, thus contributing to environmental preservation.
What are the impacts on coffee makers using the Universal Grind ?
Through testing of the Universal Grind, it was observed that it had a positive impact on the lifespan of equipment and its components. Previous graphs demonstrated that this grind allowed for optimal extraction that was not excessively dependent on brewing time. Compared to regular coffee, the Universal Grind is extracted more easily and quickly, thus reducing the wear and tear on the coffee maker's components.
Using Universal Grit eliminates the need for a grinder and allows you to brew better coffee with less raw material. While the coffee industry recommends freshly ground coffee, Universal Grit is capable of producing impressive results even after prolonged exposure to ambient air. Unlike regular coffee, prolonged exposure of Universal Grit does not significantly affect its freshness or impair crema production in methods such as espresso. However, future tests are planned to evaluate Universal Grit's ability to protect itself against oxidation and loss of freshness.
