You can use the same bag of ground coffee for most coffee makers: espresso, Italian over-the-fire, French piston, filter, and so on. We even use Universal Grind in all our commercial equipment.
Our innovation progresses linearly with the amount of coffee used, without producing defects such as bitterness or excessive acidity. The extraction of your coffee is optimized, resulting in a coffee that is always enhanced, but well-balanced, without defects.

By using the Universal Grind, you can use the same amount of coffee as usual for more intensity, but it is also possible to reduce the amount of coffee without affecting the flavor of your coffee.
To determine whether your coffee is properly brewed and considered a "Golden Cup" according to the Specialty Coffee Association, there are two variables to consider: the TDS percentage, which is an indicator of the coffee's strength, and the extraction percentage, which demonstrates the efficiency of the coffee extraction. With the Universal Grind, even if you use less coffee as shown in the image, you're still getting the optimum extraction.

Castelo's Universal Coffee Grind is nothing like the traditional grind you get with a mill. It is the result of a combination of mechanical processes developed in-house and exclusive to the company, and all the equipment required for this method has been designed by our team of professionals. This innovative process is distinguished by its absence of chemicals, preservatives or additives. We care deeply about our customers' health, and only market products that our own families would consume.
Universal Mouture is not a one-step process like traditional milling. To purchase Universal Mouture, you must select bags from the Universal Mouture collection only.
We've named our technological process Mouture Universelle to emphasize its main advantage: the ability to adapt to a wide variety of coffee makers, such as espresso, filter, bodum, French piston, percolator, Turkish, Italian on the stove, etc., with a single bag. If you come into one of our stores, it's the Universal Grind that's used in our commercial coffee makers, so it's compatible with both residential and commercial coffee makers. This eliminates the need for a coffee grinder and reduces the amount of coffee required for each brew.
If you want a more intense flavor, you just put the usual amount of coffee in your coffeemaker. You can also use between 15% and 50% less coffee, depending on the coffeemaker, while remaining within the "Golden cup" section explained above. Your coffee will be well-balanced and as tasty as ever, as you can see from the graphs measuring TDS and extraction percentage.
The "SCAA-Gold Cup Standard" is a coffee quality standard established by the Specialty Coffee Association of America (SCAA), now known as the Specialty Coffee Association (SCA). This standard establishes the criteria for preparing a high-quality cup of coffee, focusing on aspects such as aroma, flavor, consistency and taste balance. To meet the requirements of the "SCAA-Gold Cup Standard", coffee preparation must follow precise rules for each stage of the process, including coffee bean selection, storage, brewing time and temperature, and extraction method. Professional baristas use this standard to prepare an exceptional cup of coffee that stands out for its superior taste and quality.
Explanation of graphs: The x-axis represents the extraction percentage, while the y-axis represents the percentage of solubles dissolved in solution (TDS). The TDS percentage is an indicator of coffee strength, while the extraction percentage demonstrates the efficiency of coffee extraction. A low extraction percentage means that only a small portion of the coffee has been extracted, resulting in inefficient brewing and wasted coffee. The standards set by the Specialty Coffee Association (SCA) were used to assess the results, as they are a worldwide reference in the coffee industry. According to these standards for filter-style coffees, the optimum extraction percentage should be between 18% and 22% to avoid excess acidity or bitterness, while the desired TDS percentage should be between 1.15% and 1.35% to obtain a coffee of adequate strength. The grey shaded area in the center of the graph represents the "Gold Cup" area where the cup is adequately balanced.
It can be seen from the graphs that our universal grind is within this extraction balance even when using less coffee.
By using the Universal Grind, you can get a perfect, tasty brew using less coffee. By reducing your use of coffee per infusion, you're helping to reduce pollution and greenhouse gas emissions. Indeed, green coffee production is the most polluting part of the coffee life cycle, accounting for 40% to 80% of greenhouse gas emissions. By reducing the amount of coffee you use per cup, you also contribute to reducing transport, helping the environment, as resources are limited for unlimited demand. Experts estimate that we will need to produce twice as much coffee with half as much land by 2050.
When you use the Universal Grinder, you reduce the risk of errors thanks to its more uniform grinding, thanks to a series of mechanical processes. Brewing is optimized, and using less coffee doesn't compromise the quality of your cup. By reducing the risk of error, you also reduce waste. In short, using the universal grind reduces your coffee consumption while achieving optimal brewing, helping to preserve the environment.
In tests carried out on the Universal Grind, it was noted that it had a positive impact on the service life of equipment and components. The graphs above show that this grind delivers optimum extraction that is not overly dependent on brewing time. Compared with regular coffee, the Universal Grind extracts more easily and quickly, reducing the working time of the coffee maker's components.
Using the Universal Grind means you don't need a grinder, and you get better coffee from less raw material. The coffee industry recommends the use of freshly ground coffee, but the Mouture Universelle is capable of producing impressive results even after prolonged exposure to ambient air. Unlike regular coffee, prolonged exposure of Universal Grind does not significantly affect its freshness, nor does it alter crema production in methods such as espresso. However, future tests are planned to assess Universal Grind's ability to protect itself against oxidation and loss of freshness.
