How to choose an automatic machine in 2025

At Café Castelo, we don't sell coffee machines – our specialty is the bean. But because we've been supporting your coffee habits for almost 30 years, we often receive questions like:

"Can I use oily coffee?"
"Why is my espresso less intense?"
"Which machine is best for the home?"

These are good questions. And since there isn't one single right answer, we've prepared an article on automatic machines to help you make an informed choice, or simply better understand the one you already use.

What is an automatic coffee machine?

An automatic machine, also called "All-in-one espresso machine", It performs all the steps for you, at the touch of a button:

  • It grinds the coffee (thanks to a built-in grinder)

  • She measures, compacts, and infuses.

  • It also handles the rinsing and sometimes the milk foam.

It's a device designed for simplicity and speed, often appreciated in busy homes or small offices. It's been a best friend to our customers for a long time and its popularity is growing.

✅ The advantages of automatic machines

  • Speed : Your coffee is ready in seconds and that's really the main point that people are looking for: speed and simplicity.
  • Little human intervention : No need to measure, pack, or monitor. It's very simple, especially for busy mornings!
  • Built-in functionsFeatures include: milk frother, multiple programmed recipes, automatic cleaning, etc. This machine is designed to give you the impression of ordering from a specialty shop.
  • Compact and aesthetically pleasing format : Perfect for a kitchen counter and obviously very visually appealing.
  • Advanced features : Depending on the model: automatic milk frother, several programmed recipes (espresso, cappuccino, latte), intensity settings, temperature, cup size, etc.

This is an excellent option if you're looking for a good, quick coffee, and you prioritize... ease of use in controlling extraction.

🚫 The disadvantages of automatic machines

While automatic machines are convenient, they also come with certain limitations that new users are not always aware of:

  • Less control over extraction
    The machine decides the temperature, pressure, and brewing time for you. The result is consistent, but less customizable.
  • Maintenance is still necessary.
    We often talk about machines that are easy to use, but they require rigorous maintenance: Rinsing the group, cleaning the grinder, periodic descaling - Poor maintenance can quickly affect the taste or damage the machine.
  • More expensive repairs : Electronic parts, sensors, and integrated components are more difficult to replace. A simple failure may require sending the item to the manufacturer or a specialized service.
  • High purchase cost : Even the basic models represent a significant investment. Models with milk frothers or custom options can quickly exceed $1000.
  • Limited adaptation to strong coffees Some customers are taken aback when told to avoid "oily" coffees. But what does that really mean? What's called an oily coffee is simply the presence of caffeol, the oil naturally found in the bean. The darker the roast, the more this oil rises to the surface: this is perfectly normal for a strong coffee. In reality, a tasty, dry black coffee does not exist. If it's completely matte, it often means it was charred rather than roasted at a low temperature. A well-done, dark roast will always have a slight sheen, a sign of a lively and well-developed bean. Does this mean we should ban strong coffees from automatic machines? Not at all. It's important to know that these coffees contain more caffeol, which can leave more residue in the built-in grinder. The solution: regular maintenance. Grinding mill cleaning tablets like the ones we use in the shop allow oils to dissolve without damaging the grinding wheels. In short, you can continue to enjoy your favorite strong coffees in your automatic machine, provided you follow two simple rules: choose quality beans that are roasted correctly, and clean the mill regularly. This way, you can enjoy the richness of a truly full-bodied coffee, without compromising on the performance of your machine.

A QUICK NOTE: There is no "best" coffee. For some, happiness is found in a lighter coffee, for others, it's a darker coffee. To each their own cup.

Lovers of mild coffee often prefer lighter roasts, which reveal fruity, floral, or slightly acidic notes. Conversely, enthusiasts of full-bodied coffees seek the richness, bitterness, and depth offered by dark roasts.

But if you're a black coffee lover and you consistently choose dark roasts, you'll never get the intensity you crave. You're likely to remain perpetually dissatisfied, not because dark coffee is "bad," but simply because it's not suited to your taste.

Brown coffee isn't inferior to black coffee, and black coffee isn't too strong: they simply appeal to different palates. What matters is finding the roast level that suits your taste, not your neighbor's.
